Mille-feuille literally means “a thousand leaves”. And so our dessert is made up of many very thin layers. The light vanilla cream is cooked using Bourbon vanilla pods from the distant islands of La Réunion, Madagascar and Mauritius – only vanilla from these islands can bear the name Bourbon. The dessert is topped with a thin Isomalt cake decoration and gold flakes.
